Ingredients

For the pot roast

  • 3–4 lb chuck roast
  • 2 tbsp oil
  • Salt and black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste (optional, for richer flavor)
  • 1 lb baby carrots
  • 2 tsp cornstarch + 2 tbsp water (optional, for thickening)

For the baked potatoes

  • 4 large russet potatoes
  • 2 tbsp butter
  • Salt and pepper

Macaroni and cheese

  • 2 cups cooked elbow macaroni
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • Salt, pepper, and paprika

Fried cabbage with smoked sausage

  • ½ head cabbage, chopped
  • 12 oz smoked sausage, sliced
  • 1 small onion, sliced
  • 2 tbsp butter
  • 1 tsp garlic powder
  • Salt and pepper

Instructions

1. Cook the pot roast

  1. Season the roast generously with salt, pepper, garlic powder, onion powder, and paprika.
  2. Heat oil in a Dutch oven or slow cooker insert and sear all sides until browned.
  3. Add onions and garlic.
  4. Pour in beef broth, Worcestershire sauce, and tomato paste.
  5. Add carrots.

Slow Cooker:

  • Cook on Low for 8–10 hours or High for 5–6 hours.

Oven:

  • Cover and bake at 300°F (150°C) for 3½–4 hours.

The roast should shred easily with two forks.

If you’d like thicker gravy, remove the meat and whisk the cornstarch slurry into the cooking liquid. Simmer until thickened.


2. Bake the potatoes

  1. Scrub potatoes and poke several holes with a fork.
  2. Bake at 400°F (205°C) for 60–75 minutes.
  3. Slice open and fluff the inside with a fork.
  4. Add butter, salt, and pepper.

3. Make the macaroni and cheese

  1. Melt butter.
  2. Whisk in flour and cook 1 minute.
  3. Slowly whisk in milk.
  4. Simmer until thickened.
  5. Stir in cheese until smooth.
  6. Mix with cooked macaroni.

(Optional: top with extra cheese and bake for 15 minutes.)


4. Make the fried cabbage

  1. Brown the sliced sausage in a skillet.
  2. Add butter and onions.
  3. Stir in cabbage.
  4. Season with garlic powder, salt, and pepper.
  5. Cook 10–15 minutes until tender but not mushy.

Assemble

  1. Split the baked potato open.
  2. Fluff the inside with butter.
  3. Spoon a generous amount of shredded pot roast and carrots over the potato.
  4. Ladle warm beef gravy over the top.
  5. Serve with macaroni and cheese and fried cabbage with smoked sausage.
